Alfredo Zucchini with Peas & Peppers

Alfredo Zucchini with Peas & Peppers
Servings: 
Serves 4 - 6

This meal is rich, creamy, and when served slightly warm, is really satisfying! It’s an excellent transitional recipe for those new to raw foods.

Ingredients: 

¾ cup Coconut Water
2 tablespoon Lemon Juice
1 Clove Garlic, Peeled
1 teaspoon Salt
1 cup Raw Pine Nuts (optional to soak)
¼ teaspoon Nutmeg
¼ cup Young Coconut Meat
1 teaspoon Raw Honey (2 t. if you want it sweeter)
1 pinch Allspice
1 pinch Pepper
1 teaspoon Nutritional Yeast
1 Red Bell Pepper
1 cup Pea (warmed in warm water)
4 Zucchinis
Parsley, for garnish (optional)

Preparation: 

Directions for Alfredo Sauce:
Put all the ingredients (except the Zucchini & Parsley) in a blender and blend until very smooth. If using a vita-mix, this also warms the sauce and it’s ready to serve over noodles. Otherwise, slightly warm in pan or dehydrator before serving.

Directions for Meal Assembly:
Make zucchini noodles by using a vegetable Spiral Slicer, Mandoline, or creative knife work. Put noodles on plates, mix with sauce and top with bell peppers and peas or mix all ingredients together. Serve slightly warmed and garnish with parsley.

Note: The Alfredo Sauce was inspired by and altered from the wonderful Matt Amsden, in his book RAWvolution.

Suggestioned alterations: Substitute water for coconut water; substitue agave for honey; ok to omit yeast.

Very good recipe. Unfortunately, I still don't feel it tasted like alfredo, as has been the case with all raw alfredo recipes I've tried. That said, delicious anyway, and it managed to fill the "alfredo void" regardless.

This is so tasty! I've made it a couple of times now and got it just how I like it.
I warmed it up a little before serving and it's so hearty and comforting. Thanks for a great dish.

This is one amazing recipe. I subbed soaked cashews for the pine nuts. I never like SAD alfredo but sure loved this. I made it will marinated mushrooms once instead of peas and peppers, but the peas and peppers are better i think.

That was amazing. I didn't have lots of things, but I improvised.....awesome dish. I used water instead of coconut water. I made it for one, not 6 so I only used half of a zuke. I do have a mandolin, so my "noodles" were cute. I just found out that if I nuke one cup of water for one minute in the microwave, the temp is between 115 and 105 degrees. So, I made the sauce and then heated water, poured it over the noodles, tossed them back and forth to warm them. Then I set the blended sauce into the warm water, for a few minutes. It was delicious. This is fun!! I just found this site today and I've made two great recipies....the other was the raisin fudge. Yum-o!!

Hey DannyDee, I hope you didn't throw it out. I bet it was a good sauce even though you mixed the zucchini in. All you would need to do is make zucchini noodles and pour the sauce over that. That's one of the things that is so awesome about raw. You can adjust/create as you go along. Even mistakes can turn out even better than the original recipe. As a matter of fact, I would like to make this recipe without the nuts and with dried coconut and I wonder if using zucchini would make it creamy. Any ideas?

This is a great recipe! I didn't have a young coconut, so used coconut water with some fresh coconut meat. I also kept out the honey and yeast the this recipe still was awesome. Thanks.

Just WASTED a lot of time and money. My wife is the food preparer in our home, but I thought...it can't be that hard to follow simple directions (ONE step at a time)and it will be a nice surprise for her if I prepare dinner tonight. You listed the ingredients, then state: "put ALL the ingredients in a blender." I did. Then I get to the bottom and read "Make zucchini noodles". Zucchini is IN the list of ingredients, is it not?...well now it's in the Sauce. For those of you that prepare food all the time, I'm sure I appear the idiot...personally, I think anyone accepting the responsiblility of posting a recipe should make CERTAIN that the directions can be followed in the sequence they are given. A simple "put the zucchini and parsley aside and blend all other ingredients" would have made a big difference.

The pic looked so good I had to try this and it was amazing! One of my favorite raw recipes so far. I did half cashews & half pine nuts, omitted the peas & peppers in place of Karen Knowlers "fried" mushrooms. Thanks for such a great recipe!

This was soooo goood. I am going to teach it at my raw foods class. I didn't use the yeast because I didn't have it, or the honey because the coco water was sweet. The sauce turned out lovely anyway. Thank you so much!!!

This was so delicious. My husband who is hesitant about raw dishes even ate two servings. I only had 1/2 cup pinenuts so used walnuts for half and it was fine.

carrie-- i personally don't use yeast in any cheese or cream recipe, just a little salt. it comes out delicious. to me the yeast takes like that fake cheese they put on popcorn...

this looks FABULOUS and i've mean meaning to try it... i have to wait till i have a coconut though. =)

Well.. It was an absolute success. I'm typing while eating. As I was unable to get young coconut meat I used organic dried coconut chips (essentially just dried shavings of meat). I didn't have any raw honey so I used normal...Whoops. I was too scared to use the agave I have just bought. I was also unable to get somthing called cocnut water but instead I got 100% direct pressed coconut juice. I have a feeling it's the same thing. I'm living in Germany so things are quite different here regarding what's available and how things are called. This is joining the weekly menu. THANKS

Laurao, what kind of spiralizer did you use? I want the angel hair effect too. I don't have a spiralizer yet, but am going to get one, just not sure which one to get yet. Thanks. This looks so good.

Wow, that looks awesome, but I'd probably use all pine nuts and no cashews since they're too expensive to get raw online.
