Crunchy, mildly sweet with bright overtones of citrus. Do not be daunted because of the large number of items for ingredients, this recipe makes a storable amount of granola that can be eaten all week. Can be eaten alone, or with nut milk and fresh fruit.
2 cup Almonds, Soaked 8 hours and drained
1 cup Spelt Berries, Soaked and Sprouted for 1 day
½ cup Walnuts, Soaked and germinated
½ cup Raisins
½ cup Dried Cranberries
¼ cup Shredded Coconut
.125 cup Citrus Juice (I like orange, any kind works well), Freshly squeezed
2 tablespoon Agave Nectar or sticky sweetner of
choice
1 teaspoon Cinnamon
1 teaspoon Vanilla or 1 Vanilla bean
¼ teaspoon All Spice
1 teaspoon Sea Salt
1. Day before soak the almonds, walnuts and spelt berries then set out to sprout.
2. Next day add all the ingredients to a blender or food processor and blend until crumbly. Not too much though, just till it is chunky.
3. You can eat it fresh OR I really like
to dehydrate it for more of a crunch. About 6 to 8 hours on 95 degrees in the dehydrator makes it more like a grapenut crunch.
