Pick it, pack it, roll it up. A quick easy lunch or dinner that is one of my all time faves.
collard or romaine leaves for wrapping
1/4 red bell pepper, sliced
1/2 avacado, sliced
6" piece of cucumber, sliced into strips
a few shrooms of any kind,
thinly sliced
10 or so thin onion slices
carrot, made into peels
acv, lemon and salt to mariate shrooms
Put the onions and mushrooms in a small bowl with the acv, lemon and salt. Let marinate while you prepare the rest.
Put the goods in the greens and roll them up. I find collard greens best for rolling but any others will do. You might have to use a tooth pick to hold it together, just remember that it is there.
The picture doesn’t really do justice to them but I assure you they’re great.
