Inspired by Shazzie’s recipe “The Great Glass Elevator”.
Enjoy! But don’t eat before a job interview or a first date . . .
1½ cup Durian
2 Young coconuts
2 tablespoon Honey or light floral agave
1 tablespoon Vanilla
Your favourite cacao sauce
1. Remove the meat and the water from the coconuts. Place all the meat in a blender and add just enough of the coconut water until you get a consistency resembling yogurt.
2. Add the durian, agave, and vanilla into the blender and blend until it’s as creamy as your blender can make it.
3. Either use your ice cream maker, or else freeze the ice cream and run it through the blank plate of your juicer. If you don’t have either, try to re-blend it to get rid of the ice crystals.
4. Drizzle the cacao sauce on top and eat!
Tips:
It’s easiest to wait until the durian is ripe enough that it starts to split open. Also, you can try blending the durian/agave/vanilla separately if it’s too much for your blender, then mix it by hand with the coconut.
