i made this for the raw falafel recipe posted on this site. it went really well together. cawliflower makes a nice starch substitute i think. also, it gets better as it sits, so make more and eat leftovers if you like to have things on hand.
1 cup cawliflower, chopped up finely (or lightly blended)
2 tablespoon lemon juice
¼ cup parsley, finely chopped
1 tablespoon mint, very finely chopped
1 tablespoon white onion, finely chopped
2 tablespoon olive oil (raw of course)
dash sea salt + pepper
mix together in bowl. DONE!
you can get creative with this as it’s just a base for better things. you can add marinated mushrooms, chopped bell pepper, chopped olives, etc…
you can also use this to stuff a pepper or a tomato for a nice presentation.
