This recipe was adapted from a marinated Zucchini recipe from the book Feasting on Raw Foods.
2 cup Zucchini, Chopped
1 Large Tomato, Chopped
1 tablespoon Onion, Chopped
¼ cup Cold-Pressed Olive Oil
¼ cup Cold-Pressed Hemp
Oil
¼ cup Lemon Juice
1 tablespoon Fresh Basil
1 tablespoon Fresh Oregano
1 tablespoon Fresh
Parsley
1 tablespoon Fresh Dill
1 clove Garlic
Sea Salt to taste
Place Zucchini, Tomato, & Onion in bowl and set aside.
Combine Olive Oil, Hemp Oil, Lemon, Herbs, Garlic, & Sea Salt in Food Processor and blend well. Add to zucchini mixture and marinate for about 1 hour before serving.
