Crust
Equal parts oat flour, almond flour and coconut – totaling 2 Cups
.25 C date paste
1/4 tsp of sea salt
1-2 T of palm sugar
Filling
1 C melted cacao butter
7 C dehydrated coconut (raw, unsweetened variety)
2 T liquid sweetener (clear agave, maple syrup, etc)
1.5 C strawberries
1 T medicinal
black cherry extract (optional)
pinch of salt
Crust:
Using a fork, or a food processor, combine the above ingredients. Press into the bottom of a lined 8â³ square Pyrex dish – place in freezer.
Filling:
In a high-speed blender, blend coconut until its about 2 cups high in the blender – much similar to making coconut butter. Add the remaining ingredients and blend using push tool.
Assembly:
Remove Pyrex from freezer and layer crust with filling. Once evenly spread, place in freezer or refrigerator until firm. Cut into bit size pieces and serve immediately, or, store in refrigerator
