Durian Curry Soup
I've been hearing all the hype about this fruit and was delighted to see that my Asian market has started to carry it frozen. They had it shelled in packages and the whole fruit. I've since become addicted to it. I've tried the smoothie recipes adding banana and fruit to it, but to me it dilutes the sweet custardy texture and just tastes like I added some garlic to my smoothie - personally would personally rather eat it by itself. However, it does have the garlicy sweet flavor to it, so I did a search for savory recipes and came up short. I created this recipe by thinking that with the sweet garlic flavor, all it needed was a dash of sour and a little savory to make a soup. I don't think the coconut is necessary, but I had one that needed to be used.
INGREDIENTS:
1/2 Durian Pod
1 handful Thai basil
1 handful cilantro
1 splash vinegar
1 splash soy sauce or salt to
taste
2 t Curry powder or to taste
1 optional young (Thai) coconut - meat and juice - add water to desired consistency
Add all ingredients to blender add enough coconut water (or water if coconut is omitted) to desired consistency, garnish and enjoy!
