I get a weekly produce basket from a local organic farm and this is what I came up with to use up some of the beautiful veggies we got this week.
2 small, or 1 regular head green cabbage
1 carrots, scrubbed, not peeled (save those beautiful nutrients!)
2 green onions, minced
1 large beet, peeled
4 leaves fresh basil (I had purple!), finely sliced/minced
This is SO easy with a food processor with the shredder attachment! Just shred up your cabbage, carrots & beet (watch out… wear old clothes or an apron ;o), stir together with the green onions & basil, add a splash of your favorite vinegar or some lemon juice and you’re good to go. I made this for my husband to take in his lunch today so I used balsamic vinegar, which I guess isn’t raw but that’s what he likes. Compromises in the name of love… ;o) I plan to top mine with Crisyn’s Moroccan Carrot Dressing for my lunch today. Enjoy!
