Spiced Lentil Layer
* 3 cups sprouted lentils
* 1 tsp. mesquite
* 1 tbs. cumin powder
* 1 tsp. chili pepper
* 2 tbs.
olive oil
* 1/2 tsp. black pepper
* sea salt to taste
Cashew Cheese Layer
* 1 1/2 cup soaked Cashews
* 1/2 yellow bell pepper (chopped)
* Juice of 1 lemon
* 1 tbs, apple cider
vinegar
* 1 tbs. coconut aminos
* 2 tbs. coconut nectar
* sea salt to taste
Spicy Tomato Sauce Layer
* 3-4 big juicy ripe tomatoes
* 2 cups sun dried salt-free tomatoes (soaked)
* 1 tbs. apple cider vinegar
* 1 tsp. chili
pepper
* 1 tbs. coconut nectar
* 1/4 sweet onion (chopped)
* sea salt to taste
* 1 garlic clove (minced)
* Fresh jalapeno
pepper to taste
* 3 squirts Sunfire Elixir Hot Sauce
Scallion Sour Cream
* 2 cups young coconut meat
* 1 tbs. Cashew Butter
* 1 tbs. apple cider vinegar
* 1 tbs. coconut
nectar
* Juice of 1 lemon
* 1 garlic cloved (minced)
* 1/2 cup scallions (sliced)
Layers/Toppings
* 1 bunch fresh cilantro
* 1/4 sliced peppers
* 2 tbs. scallions
Blend each ingredient layer separatly. Place each blended mixture in separate bowls. Prepare the layering process by getting a pie or casserole dish. Start with the lentil layer, then cashew cheese, tomato sauce and sliced veggies of choice, and repeat the process again until you run out of mixture. Top it all off with scallion sour cream, cilantro and sliced peppers.
