Banana bread heaven! I made this banana bread just because it's the ingredients I had on hand. The banana was looking VERY ripe so I just had to do something with it. : ) It came out perfectly! I put it into mini bread loaf cups I had, but it would be perfect as banana muffins as well. It's really moist and sweet, with a little crunch because I didn't grind the almonds all the way down. You could definitely add some walnuts, raisins, or whatever else to make it even better! It was super easy to make, maybe took about five minutes to put the ingredients together! Next time I would definitely double, triple, or quadruple the recipe. Lol. I'm sure it will freeze great. I'm also going to try using more oat groats versus almonds. The oat groats I used were sprouted and then dried, but regular oat groats should work just fine.
¼ cup raw oat groats, ground into a powder/flour
¾ cup raw almonds, ground into a powder/flour
1 tbsp raw whole golden flax seeds, ground into a meal
3 tbsp
water
1 ripe banana, mashed up really well
Optional: a little natural vanilla, a dash of cinnamon, 1 tbsp agave, honey, or a little stevia
Combine oats, almonds, and any spices in a bowl.
Whisk together flax seed and water (as if it were an egg, put your muscle into it)
Add to flour mixture.
Add banana and mix
well.
Shape into a square about ½ inch thick or desired size. Dehydrate at 105 degrees for about 4 hours and flip. Dehydrate for another 6 hours or until desired consistency.
