For salad:
(vary amount of ingredients depending on how hungry you are)
.5 to 1 cup cooked wheat berries *
1 to 2 handfuls thinly sliced cabbage
.25 cup sliced raw, red onion
.5 cup olives (I like kalamata)
.5 cup sliced
carrots
half of a raw red bell pepper, sliced thin
.25 cup raw almonds
Dressing:
3 tbsp. hummus *
juice from one lemon or lime
1 tbsp. agave or honey
.25 tsp. chili powder
Toss all ingredients and prepared dressing into a large tupperware container with lid sealed, and shake the crap out of it, until salad is well coated. Eat and be well.
* For those who are raw or gluten free eaters, wheat berries won't work. I use them to make a complete protein with the hummus in the dressing.... An alternative grain or perhaps a nut-meal could be substituted, although the protein combo won't exist anymore. For those who can't use hummus, I have made this dressing before using miso paste instead of hummus and added a splash of extra virgin olive oil for richness; still yummy.
