Sometimes I make a big batch of this and serve it with apple slices for dinner. Yum! Skeptics are always amazed by how good it tastes! You can also stuff romaine leaves with this to make "tacos". If you must use chips, try pita chips or multigrain chips-- just Not tortilla chips!
4-5 avocados
1/4 red onion
Juice of 2 limes
1 tomato, diced
1-2 ears fresh corn cut off the cob, if available
Sea Salt to taste
1 handful fresh cilantro
Pretty self-explanatory-- just chop and mix the ingredients until it tastes good!
