So I am pretty much a low fat raw foodist, but when it comes to salads, I just won't eat them without some kind of oil. Also I had some umeboshi plum paste that is rarely used in recipes unless you create your own so I did. The paste itself, for those of you who have never used it, is very flavorful. It's salty so you don't need much at all, and tart, it adds ZING. This dressing was enough to
dress 1 salad so i eyeballed the ingredients like i always would put oil on my salad so im sorry i dont have exactness but it was a pretty big salad! I looked up the health benefits of Ume plums if anyone is interested here a website:

Organic Olive oil (cold pressed, extra virgin)
juice of 1/2 lemon
about 1/2 T Umeboshi paste (more or less to taste)
1 packet of stevia (more or less to taste)
Meaure all ingredients into a bowl and wisk together using a fork. If you would like go ahead and mix it around a few times in a blender but it's not necessary, ENJOY!
