Serves 4Refreshing, yummy Summer salad. The plum or grape tomatoes give this recipe a nice zing, but another tart/sweet fruit such as raspberries can be used instead.
Ingredients:
½ cup Shredded Coconut
2 tablespoon Sesame Oil
¾ cup Sunflower Seeds
6 drop Liquid Stevia
1 Large Avocado,
cubed
2 Medium English Cucumbers, cubed
2 Medium Oranges, cubed
1 cup Very ripe, sweet plum or grape tomatoes
