I'm not a big raw soup eater, but when I bought 3 heads of cauliflower for green popcorn at Trader Joe's this afternoon, the clerk asked if I was making soup. Hmmm, cauliflower soup sure sounds good, particularly since it was 12 degrees outside today! This recipe is inspired by one found on Rhio's site. I didn't have soaked almond to make almond milk, so I used almond butter. I also added garnishes for a special touch. No picture... I no longer have a digital camera but I'm in the market, so if anyone has a good reco (under $120), let's hear it.
1/2 c. carrot juice (about 3 medium carrots)
2 inch piece of ginger, juiced
2 cups cauliflower, roughly chopped
1/2 avocado
1/2 T. almond
butter
1 c. water
1/2 t. sweet curry powder
1/2 t. garam masala
salt and cayenne pepper, if desired
Garnish:
sweet red pepper, finely chopped
cauliflower, finely chopped
sweet onion, finely chopped
nutritional yeast (optional, not raw)
Blend all ingredients except the garnishes. If you like, either blend until warm or place in dehydrator. Spoon soup over garnishes in warm bowl; sprinkle nutritional yeast on top, if desired. Serve with a warm spoon.
