I made this for a raw feast coming up that I cannot attend, but wanted to support anyhow. I have a whole bag of raw cacao nibs and they smell amazing! So I really wanted to use them in something special. my family taste-tested them, and said they are very rich and delicious. since I am allergic to chocolate, I take their words for it.
I used a silicone baking mold shaped like mini-hearts, but there are many ways you oculd make these nib-bles.
And very sorry for the cell phone pic, a real digital one is forthcoming....
2 cups whole almonds
1 cup cacao nibs
(you could use 3/4 cacao powder or Chocolate Bliss powder from Radical Health)
3 tablespoons coconut oil, or coconut butter, softened or
melted
1 tablespoon almond butter
1/4-1/2 cup agave syrup
1/2 teaspoon vanilla powder
pinches of salt and cinnamon
using a spice grinder or the like, finely grind the almonds and nibs.
mix together in a bowl. cut in the coconut oil with your fingers until the mixture starts to form crumbs. cut in the almond butter and agave, mixture will be sticky but hold together. add spices and mix until very thoroughly combined. spoon into molds, mini-muffin
tins or make into balls. chill or freeze until serving. enjoy!
