Spicy Celery Mango Soup with Pomegranite
It's all about the addition of the mango salsa and the pomegranite that makes this soup the perfect blend of sweet and spicy!
Mango Salsa Dip:
1 Fresh Mango, diced
5-6 Slices Fresh Pineapple, diced
1-2 Hot pepper(s) of your choice, diced very small (adjust to taste)
1/2 cup Fresh
Cilantro
1/2 Red Bell Paper
1-2 Tablespoons Fresh Lemon Juice
Soup:
5-6 Stalks Celery
4-5 cups Fresh Spinach
1/2cup -1 cup Fresh Pomegranite Seeds (adjust to taste)
Prepare the Mango Salsa the night before for best results:
Combine in bowl Mango Salsa ingredients - cover well and place in fridge over-night
Combine rinsed and drained spinach and celery - place in Food Processor and blend well
Pour soup into reasonably sized serving bowl
Stir in mango salsa and all but a couple tablespoons of pomegranite seeds
Sprinkle remainder of pomegranite seeds on the top of each serving of soup
