A wonderful creamy base of avocado and lime with a crunch of fresh veggies.
For Base:
2 Avocadoes
1 Large Lime
2.5 C Water
.5 C Olive Oil
1 T Raw Vinegar (or to
taste)
1 C Cilantro/Coriander
For Veggies:
2 Stalks of Celery, Chopped
2 Carrots, Chopped
1 Cucumber, Chopped
1 Bunch of Green Onions,
Chopped
Any other of your favorite veggies
To prepare base -
Place meat of avocadoes, juice of the squeezed lime, water, oil, vinegar and cilantro in blender. Blend until creamy. You many add more or less water to your preference.
Chop up all of your veggies and place in a large bowl. Pour soup base over the top.
Add salt/pepper to your liking.
