This is one of the quickest and tastiest sweet treats that I have ever made. I want to warn everyone that I am not good at following recipes or measurements. I like to just throw different ingredients in a bowl and let my taste buds decide if more or less is needed. I just gave you all an estimate, but let your taste buds be the ultimate judge. They will never lie. :)
½ cup ground brazil nuts
½ cup Raw carob powder
2 tablespoon Maple syrup or yacon syrup & agave nectar
2 tablespoon agave nectar, you may add more if you like it to be
sweeter
¼ cup raisins
2 tablespoon coconut butter or cacao butter
sprinkle dried coconut
Add all ingredients in a bowl, startings with the brazil nuts (you can soak them the night before, but make sure they are dried by the time you grind them). Add the rest of the ingredients and place the mixture into paper baking cups and in a cupcake mold. It’s also nice to add some chopped pistachios to this recipe, it gives it a nice crunchy texture, but it’s optional. Sprinkle some dried coconut on top for decoration. Place it in the fridge or freezer, and within an hour (if put in the freezer) or two, this sweet treat should be ready to serve and enjoy.
