Donut Holes
These are easy to make and travel with. Good for school lunch treats without all the sugar.
1 cup soaked, dried almonds
½ teaspoon sea salt
1 scraped vanilla bean
1 cup dried pineapple
1 cup pitted
dates
5 tablespoon dried shredded coconut
Mash dates, vanilla seeds and dried pineapple together by hand, add almonds chopped with seasalt and roll into balls. If they stick to your hands too much, get your hands a little wet. Roll in coconut and they’re done! Here’s a video by Ani Phyo making these: She uses a food processor to chop the nuts, but you can do it by hand as well.
