This sandwich tastes delicious and you can make it any way you want it. I added cilantro to russell james’ bread recipe. This is a modification of a sandwich on the cafe menu at Karyn’s Raw in Chicago, Illinois.

2 slice Russell James' Mediterranean Almond Bread
½ cup Sprouts
1 slice Avocado
2 slice Tomato
1 tablespoon Pine Nut Cheese (soaked pine nuts with lemon juice blended up)
4 slice Cucumbers
2 slice Portabella mushrooms marinated in shoyu
1 slice Swiss chard or collard green
Make the bread. Store the bread in frige in tupperware when done. Make sandwiches daily and take to work for lunch!
