I made this tonight because I wanted a spinach version of my Classic Cream of Mushroom soup. It turned out so delicious! It’s very easy and only takes about 10 minutes to make. This soup is also a beautiful colour :)
1½ cup Spinach
2 cup Water
½ A Small Zucchini, Peeled
½ A Tomato
¼ cup Hemp
Seeds
¼ cup Sunflower Seeds
1 tablespoon Nutritional Yeast, optional and not raw
½ teaspoon Garlic, or more if desired, Diced
½ teaspoon Salt
1 dash Black Pepper
1 teaspoon Onion, Diced
Throw spinach in the blender with water, sunflower seeds and hemp seeds. Blend until smooth. Then add the remaining ingredients and blend for a long time until very smooth and slightly warm.
