This is a GREAT transitional recipe! I always loved oatmeal, especially Scottish style oats…soaked oat groats are even better! And cheaper…$1.89 a pound in bulk at Whole Foods. This recipe is so quick and easy to make if you’ve got the oats soaked & sprouted already. It’s incredibly versatile too…switch up your fruit, apples would be great, mangoes for some tropical love! Have fun with your spices, ginger would be great with mango I bet! Really all you need are the soaked oat groats, and you can be creative from there.
All measurements are approximate as I just threw this together. It’s quite sweet as I made it, so feel free to omit the sweeter ingredients if you like…I was raised in an Italian cooking culture, so everything is really done to taste.
Sorry bout the random pic…my cam isn’t working.
½ cup oat groats, soaked overnight, sprouted about 12 hours
1 pear (any sort...bosc are my fave!), diced
2 tablespoon raisins
1 tablespoon sunflower seeds (optional), soaked 1/2 hour, if you like (I didn't, but they're more tender if you do)
1 tablespoon pumpkin seeds (optional), soaked 1/2 hour, if you like (I didn't, but they're more tender if you do)
1 dash cinnamon
1 dash nutmeg
1 pinch sea salt (a tiny pinch!)
1 teaspoon agave or honey if you use it, or maybe 1 mashed up date
1 teaspoon flax seed (optional), (Iused ground as that's what I had, but either should be fine)
1 tablespoon shredded coconut, (optional)
¼ cup nanamilk (see recipe here) or nut milk of your choice (water might be ok but I think the milks really pull it together)
Soak oat groats overnight, sprout for about 12 hours or longer if you want. Just drain and rinse in the morning and again that night. Mine haven’t really grown much yet, but I couldn’t wait to eat them!
Mix all dry ingredients plus sweetener of your choice (the agave/honey/date) together in a bowl. Add nanamilk/nutmilk and mix thoroughly. Let stand a few minutes for all the goodies to mesh and love up on each other. They’re having a little orgy of tastiness in that bowl!
Get a spoon and join in! :p
