Honor your inner child! Remember those precious moments as a kid where worries seemed non exsistent? When you felt an inner sense of freedom and creativity? When the littlest things made you giggle and smile? BE A KID AGAIN!!! Collect cartoon characters and invite them to join you in some KimChi Sushi! I my inner children (bi gendered) love Hello Kitty so we decided to get out our favorite Hello Kitty sectional plate and chopsticks for some sushi fun! This recipe is as healthy as healthy can be. It makes a GREAT lunch for you and the kids ; )
1 raw (untoasted) nori sheet
1/4 cup raw kimchi
handful of wild dandelion greens
1 ripe avocado yo!
1 tablespoon dulse seaweed
flakes
1 tablespoon raw hemp seeds
1 teaspoon raw (cold pressed/unfiltered) olive oil
pink sea salt
fresh ground black
peppercorns
1 tomato: i used a small dry farm variety
1 handful shiso (my favorite, i grow it!)
First you will make a wonderful avocado paste! Mash together avocado, dulse, hemp seeds, olive oil, pink sea salt and fresh ground pepper. It will be thick & creamy.
Place nori sheet on flat surface. Spread entire batch of avocado paste evenly on your nori sheet. Create a line of kimchi down the middle.
Slice tomatoe in half. Place half to the side to use in your salad. Take your other half and cut into slices. Cut the slices in half. Place on top of kimchi.
Toss your dandelion greens on top. TIGHTLY ROLL!!!
Cut into six sushi slices.
Cut the rest of your tomatoe into tiny chunks. Arrange shiso and place tomato chunks on top. Pinch sea salt on top and fresh ground pepper. That is all you need. The taste of fresh tomato and shiso is by far orgasmic. Please try it.
I couldn’t be more thankful for this meal. I am enjoying it with some raw kombucha and will end the meal with a small scoop of homemade coconut-cucumber-sorbet (recipe coming soon)...
