Yet another recipe I have created to use up the left over almond pulp from making almond milk (see recipe on this site). This pudding has a texture that is light and airy, very reminiscent of a fine, light chocolate mousse. You could get creative and add a number of different essences to create different types of mousses (i.e. use orange juice instead of almond milk for an orange chocolate mousse, peppermint, almond extract, etc.) Get creative and enjoy!

1 tablespoon Cocao Powder
1 tablespoon Almond Milk
1 tablespoon Raw Coconut Powder (optional)
Make Almond Milk, and reserve pulp after straining.
Put almond pulp, along with the other ingredients in a food processor and process until smooth. Enjoy!
