Bed Time Cookies
My partner and I have made a ritual of eating these as a late night snack after I come home from work. The ingredients are varied in amounts because it really has to do with your tastes. This recipe requies only a spoon, bowl and plate and you might get away with using less! These are really a high energy snack so they really shouldn’t be eaten before bed but we are strange I guess:)
3 tablespoon carob powder
½ cup oats
2 tablespoon dry shredded coconut
4 tablespoon almond butter or other nut butter
1 tablespoon
agave
2 tablespoon water
3 tablespoon dry shredded coconut
In small-medium sized bowl add all ingredients adding the water last and saving the last of the shredded coconut. Mix together until fudgy and only add as much water as needed. Too much and it will be watery. If that happends just add more oats or coconut. Then make little balls with your fingers and roll on your plate in the rest of the coconut until ball is covered in a layer of coconut. Do this until dough is gone and then enjoy! Feel free to add a dried fruit of some kind as well. You can dehydrate these too and pack them away as a hiking snack but I prefer them fudgy. I’d accompany these with a glass of nut milk or water.
You can also omit the agave and it should taste fine for those of you who are sugar conscious.
