My 13 month-old loved this! She stood nose to nose with me and kept dipping her pointer finger in the “ricotta cheese” mixture as I ate my lasagna.
.125 cup almonds
.125 cup macadamia nuts
.125 cup pecans
.125 cup tahini
5 sundried tomatoes, soaked
1 teaspoon
mustard
lemon water
2 zucchini, sliced lengthwise
Raw Marinara Sauce, from this website
Slice zucchini thinly to make wide strips. Layer them lengthwise on a plate.
Blend all other ingredients except for Marinara Sauce, adding a bit of water (with lemon sqeezed in it) until the mixture is ricotta-like.
Spread mixture on zucchini and roll up, widthwise.
Top with Marinara.
