A simple, mild guacamole. The recipe is based on one found in an old Better Homes and Gardens Mexican cookbook from the 70’s. I updated a bit with a few healthier ingredients, but the taste is quite similar.
2 medium avocado, seeded, peeled and cut up
½ small onion, chopped
2 tablespoon fresh lemon juice
1 garlic clove, minced
½
teaspoon celtic sea salt
¼ teaspoon pepper
Mash all ingredients together with a fork (or toss in a blender and blend). Great as a dip or a sauce on raw tacos.
When storing, leave the avocado seed in you guacamole. This will help it stay greener.
