This is an adaptation of Harmonylia’s Jicama Taco recipe for those of us that find jicama difficult to work with. This recipe is light, tasty, sweet, a little spicy and tangy. Perfect as a salsa or a big salad and great on hot Summer days. What’s great about this recipe is that it’s easy and changing up the fruit makes it versatile.
1 Jicama, chopped
1 Tomato, chopped
1 clove Garlic, diced or chopped
1 Avocado, chopped
1 Small Lime,
squeezed
1 teaspoon Coriander
1 teaspoon Sea Salt
¼ bunch Cilantro
½ cup Fruit of your choice, Apple, Mango, Apricot, etc.
½ teaspoon Black Pepper
½ cup Green Onion, chopped
Peel Jicama and chop into small cubes.
Chop tomato, green onion, fruit, and garlic.
Chop avocado and set aside.
Mix everything together and top with avocado.
Easy and delicious.
