Coconut Mamey Custard

Serves 1 depending on the size of the mamey/coconut
A delicious and rich custardy pudding!
1 Young Coconut
1 Ripe Mamey
1 tablespoon Coconut Butter (optional)
1½ tablespoon Psyllium Husk Powder (optional)
Scoop meat of coconut and mamey into blender or food processor (or a bowl for the electricity free route).
Whir them around.
If wanted, add coconut butter and psyillium husk powder.
Chill for a bit.
Psyllium husk powder is used to help things hold together. I am not sure if it is actually raw but I have seen it used quite a bit in pies. It is inexpensive and available in the grocery store with fiber supplements.
