I would add more oil if you like it to be more of a pesto. I loved the flavors and the sundried tomatoes aren’t too overpowering.
2 roma tomatoes
½ cup soaked sundried tomatoes
1 handful of basil
1 garlic clove
.125 cup
walnuts
½ cup olive oil or more to taste
2 pinch nutritional yeast
1 teaspoon lemon juice
dash salt and pepper to
taste
2 roma tomatoes
pinch red chili pepper
Soak sundried tomatoes in warm water. Take out the seeds and watery part of the tomatoes, so that all you are left with is the meat of the fruit. Blend all ingredients. Add as much chili peppers as you want. I like it spicy. This tasted great with the cheese recipes on this site with “pasta” (sweet potato noodles).
