Tastes so close to yogurt…and it’s NUT FREE!

Ingredients: 

1 Young coconut, the meat, (reserve a teaspoon or so of water to help blend)
1 teaspoon Lemon Juice
1 teaspoon Finely ground flax seed
½ teaspoon Vanilla extract
¼ cup Fruit (berries work well)
1 teaspoon Sweetner (optional)

Preparation: 

Blend all ingredients (except fruit) until it’s completely smooth. I usually test taste a bit to be sure it’s tart enough and sweet enough then add lemon or agave accordingly. Then add the fruit and mix till it’s gently mixed. Chill for about 30 minutes and it will firm up a great deal.

I used kiwis and lime juice, instead of lemon. Delicious and filling. Thank you!

Oh and my sister just informed me, a coconut is not in fact a nut, it is a seed lol, so I was incorrect :P

Hey daniefon, that would be a great idea, I'm all for probiotic, so wow, what a wonderful suggestion. Hi Luna blu! Lol, yes, coconut is a nut but in comparison to the legumes and processed nuts that are out there with a side by side note for fat and calories (I'm trying to lose some poundage :P ) and how I feel after, I really don't condsider the coconut a "nut". Oooh madJeanne, good point! I use just the meat with a very tad bit, like a teaspoon or so of the water to get it going, you want it really thick. Thanks for the tips I love input.
