Coconut Milk

This is a creamy coconut milk, that tastes like the fatty canned ones you buy in the store, but so much better for you!

Ingredients: 

1 brown hairy coconut

Preparation: 

Blend the meat and water of the coconut in a vita-mix (you might be able to use a regular blender) until totally smooth and creamy. If there is not enough water in the adult coconut, you can use the water(not the meat) of a young coconut. Pour into glasses and enjoy!

Interesting question. I assume you could keep it in an airtight container in the fridge for maybe about 3-4 days or even a week. I usually drink it all at once so I never store it! lol If you're worried about it, you could probably freeze it, and when you're ready to drink it just let it thaw, then mush it up a bit, and throw it back in the blender until it's liquid again.

Just a note about getting the water out first... I scrub the coconut well, then use an ice pick to punture the eyes... One of them usually is easy to pierce and then drain out the water, may have to shake... Then use a hammer to crack against a solid surface... Hit it a second time after it's in half and the coconut meat seems to pop away from the shell... Hope this helps!

shgadwa - a vita-mix is esentially a juicer. I used a vita-mix because I don't have a juicer. Your recipe is exactly like mine!

I but the EZ break coconuts that are scored al the way around. Then all I have to do it tap it lightly all the way around the coconut with a hammer or on the cement and it breaks perfectly in half. Not too much hassle. I drain the coconut water before breaking it in healf though. Then I get the meat out (the tough part...time consuming) then I blend it in the juicer with teh blank plate. Then I out the regular juicer plate in, and add at least 1 and 1/2 quarts of water plus the coconut water to it and juice it. It is really nice coconut milk that is thick but not too thick and very divine!! Not too expensive either. Like ends up costing $1.29 for about 2 quarts milk. I have found though that it still tastes great watered down more. Check out the recipe I posted for coconut milk made with the juicer that is thinner.

I just go outside and throw them on the concrete. I bring a container to collect the water before the coconut is completely open :)
You could also probably use a hammer.

MMM! :) i really want to make this, i have hairy coconuts too... but it's such an adventure to get one opened, it really takes time! oh well, guess i'll have to take the bull by the horns.
