Beet and Carrot Salad with walnuts

This feels really good on the liver when you eat it…
Delicious and cleansing

Ingredients: 

2 tablespoon apple cider vinegar
¼ cup sesame oil
3 cup beetroot, grated
3 cup carrot, grated
½ cup walnuts, coarsley chopped
1 cup flat leaf (Italian) parsley, chopped
½ cup chives, snipped

Preparation: 
  • Add all in a bowl together, mix well
  • Splosh olive oil and apple cider vinegar over it as dressing, mix well
  • Enjoy!

I make this all the time but minus the walnuts and parsley. I use rice vinegar too instead of apple cider. Walnuts sound like a great addition though... thanks!
