tuscan raw pear & zucchini soup

serves 2-3

this is one of my mothers recipes, i grew up on this soup. to my surprise, its even better raw!

Ingredients: 

3 zucchini
1 pear (ripe)
1 carrot
½ red onion
1 teaspoon raw ginger (optional)
1 clove garlic
1 tablespoon pesto (or bunch of basil)
mint leaves to top
1 dash cayenne pepper
1 cup spinach
½ cucumber
3 stalks celery

Preparation: 

blend with water till you get desired consistency. i like it chunky, but if you like a creamier soup, i suppose you can add 1/2 an avocado. garnish with mint leaves & olive oil (optional)

so glad you enjoyed it, pundee! its even better the next day (dont crucify me for that) but the flavors really do blend nicely once it sits for a while!

Oops, hit the button when I shouldn't have.

I just made this for dinner and it was incredible gazela. Absolutely loved the refreshing hint of pear. I wasn't sure what this would taste like because of the carrot and onion but wow, everything blended beautifully and nothing was over powering. The only adjustment I made was to omit the celery because I ran out.
