a different way to get your greens into ya…

Ingredients:

1 bunch dandelion greens
1 bunch kale, deveined
.3 cup sunflower seeds
.3 cup evoo
.3 cup nutritional yeast
.3 cup sweet vinegar of your choice or lemon juice

Preparation:

process greens and seeds to paste and mix with rest of ingredients
i use my oscar vita mix juicer, but im sure a food processer or blender would work fine.
yummy on crackers, vegie sticks etc, used as a pasta sauce, salad dressing or in salads wraps: spread on kale leaves and add whatever salad sandwich ingredients you like sprouts, tomatoes, avocado etc for ‘double kale wraps’

*nutritional yeast isnt raw, if you want to omit it, use your favourite raw cheez instead

  • the vinegar i used was actually homemade root beer with reshi mushrooms that went a bit too sour, i first used to make this recipe with balsamic, but it tastes much better with the new vinegar. homemade vinegar is the best, im sure there’s some recipes for pineapple vinegar kicking around on the net…

Wow! I put a great scoop of this over some green and served it with a lemon dressing and it was amazing! It was so energizing, I felt like I was high as I was eating it!!

How awesome!... if you have a dehydrator, I bet it would make most amazing kale chips. what about olive oil, or such? ~thank you, Z

oh! i do this too. with spinach (or kale and cilantro), sesame seeds, a TB of garam masala and some chili flakes. it tastes like spinach curry. i'll give this a try too as i make it a bit more watery and use it as salad dressing.... GREEN on GREEN. =)
