Chocolate Mint Fudge

This is a quick and easy dessert. Will satisfy your desire for a chocolate fudge/candy consistency.

Ingredients: 

6 cup Shredded Coconut
1 cup Cacao Power
1 cup Agave Nectar
12 drop Peppermint Oil

Preparation: 

Process the coconut in food processor to a buttery consistency. Add remaining ingredients and blend to mix thoroughly (it will eventually form into a large ball).

Spread out into a glass pan and sprinkle top with shredded coconut
to desired amount. Refrigerate for several hours (or overnight) and
cut into fudge chunks. Quick, simple and Delicious!

Variation:
Substitute Peppermint Oil for Almond Oil for “Almond Joy Fudge.”
(Note: Can also fold in chopped nuts of choice if desired)

dngretsch, you probably used a mature coconut instead of a young one... if you did, it probably WOULD be lumpy, gritty, and disgusting. I learned that the hard way :(

I'm sorry you had disappointment with this recipe. I love it. It's like raw candy to me. If you just keep the coconut running in the food processor, the oil will begin to separate and begin to convert into the buttery consistency. I think I goofed by using the word "blend." I am sorry for that. I have since changed it.

you can probably use fresh peppermint leaves instead of extract. grind it first in a coffee grinder or some such grinder.

For the 6 cups of coconut, I just buy the organic bagged shredded coconut. So I am not sure how many coconuts it would take to make 6 cups. (=^_^=)

Oops, my bad. I forgot to put the measurement for the peppermint oil. It is 12 drops of peppermint oil for the 6 cups. I often only make a 3rd of a batch for myself. Otherwise, I would be eating way too much of it. (=^_^=)
