Warming Chia pudding

This pudding is my favorite way to eat the SUPER nutritious chia seed, which is a complete protein, and an excellent source of calcium. The Aztec messengers, running from place to place constantly, could subsist on just a handful a day!

Ingredients: 

4 tablespoon chia seeds
1 banana
1 teaspoon mixed cinnamon, nutmeg, allspice, etc.
water
1 medjool date
4 strawberries
1 tablespoon chopped nuts

Preparation: 

Blend banana, spices (improvise with these spices, they are all to taste), and vanilla with enough water to make a thin smoothie.

Pour this mixture over the chia seeds (keep in mind I estimated the amount of chia seeds, generally the rule is three times as much fluid as chia) and leave to soak for about 12 minutes in the fridge, or on the counter.

You will be shocked to find that after 12 minutes your mix has formed an almost solid chia gel, and the chia seeds will have soaked up all the delicious flavour! Top with chopped strawberries, dates, nuts, etc. Enjoy!

*For variation, vary the spices, use vanilla bean, bananas on top, etc. This is just a basic chia pudding!

Loved this for dessert last night. Topped with some sliced bananas, soaked walnuts and added some vanilla extract. The seeds weren't crunchy at all.

cherie03-i use black chia seeds. they make the overall recipe color kind of grayish, but i dont really mind. if you do then im sure the white seeds would be fine, although i've never seen any personally.

Very interesting....and most importantly...very YUM!! I just watched one of Brian Clement's videos (from Hippocrates Institute) and he talks about the benefits of Cha Cha Cha Chia seeds. Glad to have an excellent recipe using them. Thanks for sharing!

Ooh, this is a great way to get Chia Seeds into the diet! We didn't have any Strawberries, so some Peach and a pinch of dried Ginger did wonderfully in place of them. Thanks for posting!

About the chia seeds - are you using the black chias or the salba white seeds? What impact do the black seeds have on the color of the finished recipe? Thanks

Wow, what a fantastic idea! This made a terrific breakfast. I used to make a similar pudding with flaxseeds, but I really prefer the taste of the chia. I think I will be having this very often!

Nope, they don't, they absorb all of the moisture. The texture is similar to rice pudding.
