Very MINT dreamy.
BROWNIES, (adapted from Jennifer Cornbleet's recipe)
4 cup walnuts, unsoaked
16 medjool dates, unsoaked
1 cup carob powder
5 sprigs fresh mint
½ teaspoon sea salt
COCONUT CREAM
2 cup coconut meat, from 2-3 young coconuts
2 cup cashews, soaked
1 cup coconut water
½ teaspoon sea salt
STRAWBERRY TOPPING
1½ pound strawberries, sliced
1 tablespoon agave nectar
3 fresh mint leaves, (for garnish)
FOR BROWNIES: Wash mint and leave on counter overnight to dry. Or put in dehydrator at 110° for 2 hours (or more). In a food processor, chop 1 cup of the walnuts and set aside. Process remaining walnuts and salt until finely ground. Add dried mint (mint should crumble from sprigs) and dates and process until mixture sticks together. Add carob powder and water. Form mixture in two squares. Press reserved chopped walnuts into tops of brownies. Cut into 1-inch squares. Let chill in refrigerator for 2 hours.
FOR COCONUT CREAM: Blend ingredients until smooth and creamy. Set aside.
FOR STRAWBERRIES: Add agave nectar to the strawberries
TO ASSEMBLE: In bottom of trifle bowl, place brownie squares, top with coconut cream, then sliced strawberries. Repeat with remaining brownies, cream and strawberries. Put bowl in refrigerator to chill for 1 hour. Garnish with mint leaves.

This was one of the most delicious raw desert that I have ever had.Really,I loved it!!
I didn't have young coconut and so I did with shredded coconut and it was wonderful.Thanks The dailyraw.
This sounds just incredible. One question: How do you get the meat out of regular (not young) coconuts, minus that brown stuff?

I just made this a OMG was it delicious!!! I made it into a strawberry shortcake instead of a trifle, using the brownie as the cake and layering some coconut cream and mashed and sliced strawberries. I didn't feel like waiting for the mint to dry so I just tossed into the food processor in its fresh state. The brownies alone are unbelievable. Thanks for posting this.
Oh, I forgot. Our food processor moves clear across the counter when we chop the dates. I never even thought of chopping the dates. Good tip. If you still want to use the cream, you can use an extra cup of cashews (or pine nuts, or macadamia nuts) in place of the coconut

I made this last night, minus the coconut cream since my husband HATES coconut (I know, how could he!) and it was a hit! I couldn't stop eating the brownies.
My food processor, a Hamilton Beach, new at Christmas, has a heck of a time chopping those dates. It sounds like it's going to explode. Maybe I need to cut them up a bit first.
