The macadamia nuts make it buttery, just like the real thing.
2½ cup macadamia flour
¾ cup date paste
½ teaspoon vanilla extract, or to taste
¼ teaspoon sea salt, or to taste
olive oil (if necessary)
1. Grind all ingredients in the food processor, making a smooth dough
2. Remove dough from the processor and spread it on a flat baking dish
3. For the best consistency, put the dough in the fridge and leave overnight
4. Cut up the shortbread in pieces of whatever size you wish
5. Enjoy!
I am having my first vegan "tea" on Friday. These shortbread cookies will be on the menu. Can't wait to try them!
I haven't tried making it in a stoneware shortbread mold. I made mine in a bread pan, it being the only squarish baking dish available.
Let me know how your mother in law likes it! Date paste is just ground up dates with a little bit of water in it (if necessary).

Has anyone tried making this in one of those stoneware shortbread molds? Just wondering how well it would come out of the mold and retain the impressions.
Just grind up macadamia nuts in a food processor or coffee grinder (but don't let it turn into macadamia butter).

You can just make your own with a food processor. That is probably the easiest way.
