Makes one cake

I was in the middle of making carrot cake when I was overcome with the desire to create a pineapple cake instead. So, this is essentially carrot cake icing with a bunch of stuff added. It was so easy, and it turned out wonderful! A great tropical breakfast or dessert! Very sweet!

Ingredients: 

2 apples, peeled and cored
1 cup cashews, soaked
8 dates
½ cup flaxseed, ground
½ cup orange juice
½ lemon, fruit and juice
1 tablespoon coconut oil
1 sprinkle salt
1 sprinkle orange rind
2 cup pineapple, diced
kiwiberries for garnish

Preparation: 

Put first 9 ingredients in food processor and blend. Pour into dish and set aside. Then put pineapple in food processor and blend. Pour onto cake. Slice kiwiberries (the most adorable fruit!) and arrange on top. Yummm!

Just made this. I freezed it coz the filling was rather wet. (is it suppose to be wet?). So it turned out like ice-cream, with a pineapple sorbet topping. Great stuff still!

hi Rakao...i just made this and it turned out yummy! i only had 1 apple, and i didn't have those cute kiwiberries. i did chill it and it was like a soft cheesecake....thanks!

Yeah, you scoop it into a bowl & eat with a spoon. Hmmm, I wonder how it would turn out dehydrated...

that sounds and looks delicious and simple. is it something you have to eat in a bowl, or does can you cut into it like cake?
