It all started when I saw the first caramel apples appear in the grocery store and I couldn’t resist telling my little girl how those were my FAVORITE fall-time treat when I was a kid growing up. Hearing this, she naturally insisted that I buy one for her. I did. And I salivated as I cut it up for her to eat (too hard for a 3 year old to figure out the art of eating a caramel apple). That’s when I started scheming to create a raw caramel apple recipe. So without further ado – here it is:
1 Apple, Washed and dried
5 Dates (depending on type used), Mashed into paste
¼ cup nuts or seeds of choice, chopped
Wash your apple really well and dry. I’m sure you can find the sticks at a craft store but I just stole the one out of my daughter’s caramel apple! Put apple on the stick. Next use the blank plate on an agar style juicer (Champion, Sampson, etc.) to create date paste. You could also just use a mortar and pestle to grind the dates into a paste if you don’t have one of these types of juicers. A rolling pin might work as well, use your imagination. Spread the date paste over the apple and roll in chopped nuts. Sprinkle with sea salt if desired (totally made all the difference for me) and enjoy!!!

I made this today! SOOOOO GOOD - Certainly reminds of a caramel apple but BETTER! I used a rolling pin to flatten the dates as per your suggestion but I also have a mini cuisinart processor and may try it as danifon did. Thanks again...This was a great fall treat!
I made one last night, it was great I used my mini food processor to grind the dates. I added a little mesquite and then rolled it in coconut. To spread it, I used a spatula and then wet hands. It was beautiful too. Thank you for the recipe

RawKidChef - do you have a mortar and pestle (usually used to crush and grind herbs)? I haven't tried anything else but I imagine the rolling pin method would work really well if you roll - smoosh - scrape up into a ball and start again until smooth. Also try soaking the dates for smoother results. I don't know if the vitamix would work --- anyone else ever tried this?
Hi angie, thanks. I've had the idea of coconut oil chocolate as well, but was thinking of trying it with cacao butter chocolate also.
Just need to get some apples. One question, though. How do you get the date paste so smooth? I don't have a food processor or juicer, just a vita-mix, and have never been able to get a smooth paste the way you did. How does one make smooth date paste with a vita-mix?

Wow! This looks amazing! Do you think we could make a chocolate caramel apple by dipping the caramel-apple into raw chocolate before topping with nuts?
