The cauliflower is a really good replacement for rice. I’m thinking of using it a lot more in the future, instead of rice, cous cous etc. It picks up the flavours and looks convincing too! :)
cauliflower, chopped into little pieces
corn, kernels cut from the cob
red capsicum (bell pepper), chopped in squares
shallots, diced
carrot, cut into rounds or squares
tomato, juice squished in and chopped
peas, from pods, pods diced and added
mushrooms, chopped
coriander, to top and serve
braggs or sea salt (optional), to taste
nutritional yeast (optional), to taste
braggs or sea salt (optional), to taste
Just stir it all together (leave it to sit for a while to soak up the tomato and braggs if you added some) and top with coriander and some of the shallots, and if you’re feeling decorative, some choppped tomato :)
i loved this recipe- thanks for posting. i used broccoli since i am not a big cauliflower fan and the texture came out really nice and gentle. i also added sesame oil and coconut water. i marinated the mushrooms in nama shoyu for a while first to make something similar to my favorite cooked chinese dish- brown rice with broccoli and tofu. i couldn't believe how tasty it was.
This is great!!! I left out the Braggs and the nutritional yeast and added a couple of spoons of ACV. Wonderful. Thank you.
Tried this the other night, but warmed the whole dish over a steamer. It was delicious delicious delicious. Added some spinach and pecans. Thanks for that what a clever idea
staraw, sounds (and looks) tasty :). What you wrote really resonates with me, i feel the exact same way.
This looks so good! Plus its without oil or fat!
cool! Thanks!
:)
Thank you! I'm so glad to have gained back my love affair with food- and on a more beautiful, natural level :) Yay for spreading vegan love with non-cooking!
Wow staraw all of your recipes sound & look fabulous!
Thanks 3relefords :) Enjoy!
Chicacgomama- I just chopped it roughly. I mean the florets fall apart/crumble easily and the stalks just chop to the size youd like
How did you chop the cauliflower? Just regular or with a grater or mandolin?
This presentation is wonderful. Very creative. Looking forward to trying your recipe out. Thanks
