this ice cream has won the hearts of my friends and family who would have never consider eating raw foods before ! so good!!!!
base of ice cream
1 cup soaked cashews
1 cup shredded coconut
1 avacado
½ water
2 tablespoon coconut oil
1 cup agave nectar or honey
pinch salt
3 tablespoon fresh mint
1 teaspoon mint oil, you can add more if you like a strong mint flavor
cacao swerls
½ cup cacao powder
¾ cup agave nectar or honey
1 tablespoon coconut oil
base ice cream.
1. add all ingredients for base ice cream into food processor and blend till smooth a creamy
2. put the mixture into a bowl, set aside
cacao swerls
1. add all ingredients for cacao swerls into food processor and pulse till smooth
2. take a large container that can be put into the freezer and start alternating layers of base ice cream and cacao mix
3. put in freezer overnight
4. enjoy
you can just mix both ice cream and cacao mix together but i like getting the swerl effect

You know, if you add between a tsp and a tablespoon of spirulina to this recipe, it makes the whole thing GREEN, like the "original" mint chocolate chip! (Got that idea from David Wolfe and Shazzie's NAKED CHOCOLATE!)
man, this one i probably my favorite recipe... i have some in the freezer right now, im tempted to eat it for breakfast
