Sweet Potato Candy

For those who want something other than chocolate this is your answer.

Ingredients: 

½ teaspoon cinnamon
¼ teaspoon nutmeg
pinch sea salt
.33 cup walnuts
¼ cup Coconut flake
5 dates, softened in 1/3C water
1 teaspoon vanilla
1 tablespoon coconut butter, artisana brand
1 slice pineapple
¼ cup raw agave
1 sweet potato, peel & slice 1/8 thick

Preparation: 

Take the first 5 ingredients and blend together, set aside in a bowl with lid.
Take the next 5 ingredients including the soak water and blend as well, add to dry mixture and stir until they are one. Add peeled and sliced sweet potato to mixture and toss with hands until happy. Let sit at room temp for 5 hours and toss when you think about it. This will get the sweet potato nice and soft. Place on teflex sheets then sprinkle with extra coconut and dehydrate at 105 degrees for 2 1/2hrs, flip and dehydrate for another 1 1/2hrs. Remove from teflex sheets and dehydrate for another 7hrs. Let sit in dehydrator until cool. Store in air tight container. These are incredible warm too!

they don't get crispy like potato chips they are kind of chewy kind of like a caramel but these wont kill your teeth. Before I dehydrate them I like to take the extra Gooo and top each one before I sprinkle with coconut. Really gives them the candy factor:)

Hemp33, this sounds delish. I love yams! I was just wondering how cripy these get. I dehydrated some sweet potatoes (white ones) and I couldn't seem to get them crispy enough. I did 1/8" slices on mesh sheet so no turning was necessary. Anyways, can't wait to try this...after my MC is done.

Hi Angie, I use the sweet potato with the orange flesh, sometimes they are called yams. I slice the pineapple about a 1/2 inch or so. I have a pineapple corer/slicer so it does it for me with no mess. Best darn thing I ever bought. you can find it on www.qvc.com anyone who eats a ton of pineapple should have one!

Hey Angie I think the pineappe is the second 5th ingredient to go into the blender and I really believe she is referring to the orange fleshed sweet potatoe... Correct me if I'm wrong Hemp33... :}

So, when you say sweet potato, do you mean the one with white flesh, or the ones with orange flesh? They are called different things depending where people live... The recipe sounds fascinating! And how thick did you slice your pineapple?
