A creamy, sweet, tangy, complex tasting salad with no nuts or added oil. Fava Beans are in season right now, but not for much longer!

Ingredients:

1 pound fava beans, shelled and peeled
1 small shallot, minced
2 clove garlic, minced
2 tomatoes, chopped
1 avocado
2 lemons, juiced
1 orange, juiced
2 dates, pitted
1 tablespoon herbes de provence
1 teaspoon salt
½ teaspoon cayenne pepper

Preparation:

Slice the fava beans. Combine with the shallot, garlic and tomato.

Blend the remaining ingredients until creamy. Add to the bean mixture. Season to taste, garnish and enjoy!

starjen42, did you peel the beans after you shelled them? Each individual bean has this crazy, super thick, almost waxy coating on it, but once you peel them they are wonderful and sweet! I am enjoying this delicious dish right now! Thank you, nanamensah!

I got some favas at my farmer's market a few weeks ago, but I didn't know what to do with them raw. I found a recipe for just olive oil and S/P but they were so bitter, I couldn't eat them! I'm going to try this, it sounds much better!!

Carmentina - This recipe calls for fresh fava beans, not dried. Fava are similar to fresh lima beans. These soft, green beans are eaten as is, without sprouting.

Must the favas be sprouted?
