Oh you poor thing—no answer yet? I KNOW there are recipes, though I’ve never used one or had a craving for that. Sunfood, I believe has cacao butter, which I’m sure is necessary. I’ll search as well. I know I’ve come accross this.
Check out www.sunnyrawkitchen.com. I’m pretty sure that’s it or just search Sunny raw kitchen blog—there is a recipe there for a cake that has a white chocolate mousse layer. It goes like this:
1 1/4 C orange juice
1 1/4 C raw cashews, soaked
1/4 C agave
2T vanilla (seems like a lot to me)
1T orange zest
1T + 1t lecithin (if using granules—grind in the coffee grinder)
1/4 C + 1 T cacao butter (order from Raw Food World)
Blend all except the lecithin and cacao—add in the rest and put in the fridge to set.
Sounds like a LOT of work, but I think it can be done.
