Wilted Greens

I buy greens and without a doubt they will wilt in my fridge after 24 hours. then they are just gross. Is there a way to prevent this? What do you do with wilted greens? ...I hate to throw them out.

    if you use a hole punch to make about 15 holes per side of a zip lock bag, then seal the bag, your greens will keep a lot longer. it gives them just enough air to breathe, but not enough to wilt.

    a bonus is you can re-use the bags by taking them with you shopping instead of using the disposable veggie bags at the market.

    Also check the temperature setting of your fridge. Your greens shouldn’t be wilting in 24 hours! The correct temp is about 34 degrees.

  • Wilting is caused by osmosis (moving of water from an area of low solute concentration to an area of high solute concentration). What causes wilting then? Having moisture on the outside of your veggies. How to fix this? Put something to absorb the moisture inside a bag along with your veggies (this works with fruit too). A napkin or paper towel works, but produces waste. If you can, use some small cheap towels that you can wash and reuse. This works really well, and will be much cheaper than green bags.
