What's your favorite thai coconut recipe?

The young coconuts at the Asian market were 89 cents each. Needless to say I need some recipes! What is your favorite?

  • Two easy ideas:

    1. Blend the water and meat of a young coconut till smooth - one of my very favorite drink!!!! (Variation: add strawberry or mango for flavoring, or add pineapple for a raw virgin pina colada)

    2. Blend the meat of 2-3 young coconuts, add a tablespoon of coconut oil and a tablespoon of agave nectar (or sweetener of your choice) and blend till smooth (you will need a high speed blender for this) - a marvelous pudding!!! Serve over fresh bananas and top with shredded coconut for a mini coconut cream pie!!!

    my fave is coconut yogurt or pudding

    My yogurt recipe is

    3-4 coconuts separate water and meat

    probiotics of your choice I use newchapter organics vegan all flora

    You puree the meat with a little h2o to just the right consistency and then add in your probiotics you can culture in the dehydrator for 24-48 hours depending on how tangy you like it or on the kitchen counter (cover with cloth or paper towl and rubberband to keep out hungry flies)

    refrigerate once done and use within 7-10 days

    and the pudding is

    3-4 coconuts

    1/4-1/3 cup sweetner (date syrup maple syrup)

    tsp vanilla or bean a little coconut h2o if needed top with cacao nibs and your in heaven (oh sometimes I add a little artisana coconut butter to jazz it up (or thicken if I add to much coconut h20}

    There is also a cocnut almond chile pad thai recipe in the book RAW that is sooooo awesome but too long to list.

  • The chocolate shake.

    in the blender, with your coconut meat and water, add cacao powder 2-4 Tablespoons, agave, pinch of salt, dash of cinnamon and maca. mmmm.
